Fossa Cheese

Moving southwards, but remaining in the hinterlands, don’t miss the chance to savour the gastronomic symbol of Sogliano sul Rubicone (FC), the Fossa cheese, which is named after the slow medieval ageing technique, which took place inside pits dug out of the rock (fosse) or of tuff and has received the PDO mark.
