The “piadina romagnola”
This is where good food is a real cultural passion, because food in Romagna resembles its people: frank, simple and genuine.
This is why its symbol is the piadina, a sort of round flatbread which, through its ingredients (flour, lard, water and salt), tells also about the farming origins of this country. It is also the ideal kind of street food to be savoured on the road, and moreover, perfectly balanced from a nutritional point of view.
Still kneaded and spread out by hand today by the so-called “arzdore”, the original recipe is still faithfully passed down from generation to generation, in the full knowledge that it is a great heritage which needs to be preserved. If you want to stuff your piadina, ask for PDO Squaquerone, a kind of local cheese, soft and light, combined with the Parma ham, another regional gastronomic delicacy.
